Thai Sweet Potato Fries

Cauliflower

These fries are sweet and spicy, with a flavorful coating so crisp it shatters when you bite.

Ingredients for Fries
1/3 cup rice flour
2 tablespoons cornstarch
2 tablespoons unsweetened coconut flakes
1/4 teaspoon salt
1/2 teaspoon baking soda
1 tablespoon sesame seeds
2 orange-fleshed sweet potatoes, cut into 1/4-inch batons
½ cup Thai sweet chile dipping sauce
¼ cup roasted peanuts, chopped
1 tablespoon cilantro, chopped

Ingredients for Thai Sweet Chili Dipping Sauce
3 garlic cloves
2-3 red jalapenos, seeded
½ cup sugar
¾ cup water
¼ cup white wine vinegar
½ Tbsp salt

1Tbsp cornstarch
2 Tbsp water


For the Fries

Mix flour, cornstarch, coconut, salt, baking soda and sesame seeds in a small bowl.  Add just enough water to form a loose paste (yogurt like consistency).  Toss sweet potato batons into paste and coat.  Fry in hot oil until crispy.  Blot on paper towels, dust with sea salt and serve hot. Mix together chile sauce, peanuts and cilantro and serve with sweet potato fries.

For the Dipping Sauce
Puree ingredients in food processor except the last two (this is to slurry).  Place puree in sauce pan, simmer 5 minutes.  Combine cornstarch & water and slurry, simmering and stirring.  Simmer one minute more.  (Slurry allows suspension of pepper particles for a nicer look).  Cool, place in an airtight container and refrigerate for up to a month.
