Salmon In Filo Over Red Bell Pepper Sauce

Ingredients for Salmon
2 salmon fillets, skinned
4 Tbsp Round Pond Italian Varietal Extra Virgin Olive Oil
½ pound mushrooms, finely diced
2 large shallots, finely chopped
1 clove garlic, minced
¼ cup dry white wine
3 sheets filo dough
Melted butter for brushing
Salt and pepper

Ingredients for the Red Bell Pepper Sauce
1 red bell pepper, charred, peeled and diced
2 Tbsp Round Pond Italian Varietal Extra Virgin Olive Oil
½ small onion, finely diced
1 clove garlic, minced
¼ cup dry white wine
1 cup fish stock or clam juice
Salt and pepper

For the Sauce
Heat Round Pond Italian Varietal Extra Virgin Olive Oil in sauce pan. Add onion and cook 3-4 minutes, do not brown. Add garlic and cook 1-2 minutes. Add diced bell pepper. Pour in wine and reduce till almost dry. Add stock and reduce by half. Puree in blender and adjust seasoning with salt and pepper.
Keep warm.

For the Salmon
Heat 2 Tbsp of Round Pond Italian Varietal Extra Virgin Olive Oil in a medium sauté pan. Sprinkle salmon with salt and pepper and add to pan. Sear 2-3 minutes on each side, remove and set aside.

In sauté pan heat remaining 2 Tbsp of Italian Varietal Olive Oil. Add shallots and cook 2-3 minutes. Add garlic and cook another minute. Add mushroom, sprinkle with a little salt and pepper; cook 4-5 minutes to release juices. Add white wine and reduce till dry. Remove from heat.

Lay out one sheet of filo dough, brush with melted butter. Place second sheet on top and repeat. Place third sheet over second. Now place both salmon fillets on top of dough evenly spaced. Top each salmon with half of the mushroom mixture. With knife cut filo in half. Fold dough to enclose salmon, brush with butter. Place on baking sheet sprayed with vegetable oil. Bake at 375 degrees for 5-7 minutes or until dough is golden brown.

Serve over red bell pepper sauce.
