Peppermint Marshmallows


The perfect winter treat! These homemade Peppermint Marshmallows features everything to combat those winter blues - peppermint, white chocolate and candy canes.

3 packs powdered gelatin
3/4 cup water
1 1/3 cup sugar
1/3 cup corn syrup
1/4 tsp salt
2 egg whites
1/2 tsp peppermint extract
1/2 cup crushed candy cane
1 lb white chocolate

Bloom the gelatin in the water in a large bowl. Meanwhile, in a sauce pot combine the sugar, corn syrup, 1/3 cup of water on low heat until the sugar dissolves. Increase the heat and cook until the mixture reaches 240 degrees on a candy thermometer. Remove from the heat and pour the mixture over the gelatin and stir until smooth and all the gelatin has dissolved. Now place this mixture in a kitchen-aid mixer bowl and whip on high speed until it triples in volume. In a separate, very clean, mixing bowl whip the egg whites to stiff peaks. Then fold the whipped whites into the whipped sugar mixture. Add the extract and salt and then pour the mixture onto a baking tray lined with parchment paper and dusted with powdered sugar. Spread the mixture out evenly and then let it cool.

Once completely cooled, cut the marshmallows into cubes and dust with powdered sugar. Then using a double boiler, melt a small amount of white chocolate and dip the bottom of the marshmallow into the chocolate. Then immediately dip it into the crushed candy cane.
