Gott's Roadside California Burger


Many thanks to Gott's Roadside for sharing this recipe with us!  Gott's is a landmark Napa and St. Helena eatery celebrated for it's fresh, locally-sourced approach to drive-in food. Their delicious California Burger is one of a kind with its balsamic glazed onion, fresh arugula, and fried egg.  Now you can make it yourself and bring the taste of California home!

Ingredients for Balsamic Glazed Onions
2 tsp olive oil
2 each yellow onions (roughly 1lb), diced
3 Tbsp granulated sugar
6 Tbsp balsamic vinegar
½ tsp salt

Ingredients for California Burgers
8 slices cooked bacon
2 cups arugula
4 each eggs, fried over easy
4 slices Swiss cheese
4 each hamburger patties (about 1/3lb patties)
4 potato or egg hamburger buns
½ cup mayonnaise
4 Tbsp melted butter
6 Tbsp balsamic glazed onions
salt and pepper to taste

For the Balsamic onions:  Heat the olive oil in pan over medium-low heat.  Add the diced onions and salt to the warmed pan and cook until soft and translucent, stirring occasionally, about 10 minutes.  Stir in sugar and cook for an additional 5 to 10 minutes, then add vinegar and cook on low heat for 10 to 20 minutes.  Stir occasionally until the onions are soft and dark brown in color and all the vinegar is absorbed.  Set aside.

For the Burgers:  Heat a griddle or pan to toast the hamburger buns, and turn on the grill for the burger patties.  Brush the cut sides of the hamburger buns with the melted butter and place them cut side down on the griddle or pan and toast until golden brown.

Season the patties with salt and pepper and place on the grill.  Cook until close to desired doneness, then place 2 slices of bacon (folding as needed) and a slice of cheese on top of each patty, cooking until the cheese is just melting.  Remove from heat.

Remove golden brown buns from the heat and line up the tops and bottoms, cut side up for easy assembly.  Spread 2 tablespoons mayonnaise on each of the top buns and 1 ½ tablespoons of the balsamic glazed onions on each of the bottom buns.  Place the patties with bacon and cheese on top of the balsamic glazed onions, then top each with a fried egg and a ½ cup of arugula before placing the top bun on each burger.  Enjoy!
