Friday Night Beef Sliders

For the Slider
2.5 lbs Ground Beef (80:20)
½ cup yellow onion, small diced
½ cup fresh Leek, chopped
½ Tbsp fresh garlic, chopped
½ Tbsp Thyme, chopped
1 tsp Tarragon, chopped
`Salt & Pepper as needed
`50 small potato buns or 8 regular buns

For the Garlic & Kale Pesto
4 each garlic cloves
4-6 leaves Lacinato kale
½ Tbsp toasted pine nuts
¼ bunch fresh basil
1 Tbsp oregano leaves
1/8 cup grated Pecorino Stagionatta
½ – 1 cup Round Pond Italian Varietal Extra Virgin Olive Oil
`Salt & Pepper as needed

For the Aioli
6 egg yolks
1 clove garlic, roughly chopped
½ lemon, juiced
1 ½ cups Italian Varietal Extra Virgin Olive Oil
1 tsp Dijon mustard
` Salt & white pepper

Directions for Sliders
Sautee onion until lightly golden, allow to cool completely.  Puree onion, garlic and leeks in food processor until very finely pasted, add herbs and pulse again.  Gently work beef together in a bowl with the chopped onion mixture, add salt & pepper.  Test a small batch for seasoning.  If needed adjust seasoning.

Directions for the Garlic & Kale Pesto
In a food processor, puree garlic and kale leaves, add pine nuts, basil, cheese and oregano and pulse in.  Add Italian Varietal Olive Oil in a steady stream while pulsing.  Add salt and pepper to taste.  Keep chilled in a covered container.

Directions for the Aioli
In food processor add garlic, lemon and Dijon mustard and pulse once or twice.  Then add yolks.  While running continuously stream in olive oil, then add salt at the last minute.

Assembly
To the potato bun, add Aioli to one side then the garlic & kale pesto to the other – add the burger in between and enjoy!
