Enjoy Your Winter Whites All Year Long


There is nothing more refreshing than the crisp elegance and complex citrus layers inherent in a fantastic white wine. This winter, we didn’t want to let the weather outside stop us from enjoying some of our favorites, so we asked Chef Jamie Prouten, to help us perfectly pair each of our Round Pond Sauvignon Blancs with the cozy, hearty dishes we love to eat in the wintertime. 

Tip 1: Embrace The Smoked Element.
There are numerous ways that using a smoked preparation can elevate your white wine. Smoked fish, for instance, is the perfect counterbalance to the rich, vanilla notes found in barrel aged whites like our Reserve Sauvignon Blanc. Also, the richness, or fattiness, in fish is balanced by the ripeness in a white wine, resulting in a complementary pairing. So, the richer the dish, the riper or fuller bodied the white should be. Using smoked foods that have been cured is great too; the salt used in the curing process reduces the impression of acidity in the wine, creating a lovely combination.

Tip 2: Roast Citrus And Winter Garden Vegetables (Together) For Fantastic Results.
Winter brings both sweet, juicy citrus to the trees and earthy root vegetables to the garden; together they have a deep, delicious flavor that pairs beautifully with Sauvignon Blanc. Try drizzling your citrus vinaigrette on a beet salad, roasting your citrus while roasting your beets, or even roasting both in the same pan as a fun experiment! One of our favorite combos right now is our 2014 Rutherford Sauvignon Blanc with Chef Jamie’s Roasted Beet and Citrus Salad.

Tip 3: Don’t Forget Your Winter Greens!
Winter greens, such as chicory, are a great complement to Sauvignon Blanc—the bitter element of the greens leaves the impression of sweetness in the finish of the wine. Bitter greens are also enhanced by the slight bitterness in a fine Extra Virgin Olive Oil. As our Chef Eric Mazcko says, “Like and Like Makes Less Like,” in other words we may think of complementary flavors as accentuating one another but in reality they cancel each other out. So try drizzling a little of our Round Pond Italian Varietal Extra Virgin Olive Oil over your favorite sautéed winter greens while sipping our Rutherford Sauvignon Blanc – you will get your antioxidants and enjoy it in the process. You can’t go wrong!
