Dora's Garden Salsa


Dora's salsa--made from veggies and chiles gathered from the Round Pond garden--is a mainstay during the busy harvest season here.

2 Tbsp Round Pond Italian Varietal Olive Oil
½ onion, coarsely chopped
*7-10 cayenne chilies, fresh or dried will work
3 large red tomatoes, coarsely chopped
3 cloves garlic, coarsely chopped
¼ cup cilantro
Salt to taste

Heat Olive Oil in a large pan over medium heat and saute onions until translucent. Then add chilies, tomato, garlic and cilantro. Sauté for about 10 minutes until everything is soft. Pour sauteed ingredients into a blender and blend until smooth. If the salsa is too spicy, just add another tomato. This salsa should be thick.

Serve with tortilla chips.

*Choose the amount of chilies you want depending on how spicy you want your salsa.
