Avocado and Heart of Palm Salad

Summer is avocado season, and they seem to be everywhere!  This simple salad brings together the creaminess of delicious avocado and the crunch of the hearts of palm. The red onion adds just the right touch of sweetness and a hint of lime makes all the flavors pop.  Pairs wonderfully with our Reserve Sauvignon Blanc.

Ingredients
5 oz fresh lime juice
2 oz Champagne vinegar
1/3 cup honey
2 1/2 cups Round Pond Estate Italian Varietal Extra Virgin Olive Oil
1 Tbsp salt
4 whole avocados
8 oz hearts of palm, sliced into rounds
1/2 red onion, sliced very thinly
6 sprigs cilantro

Place lime juice, vinegar, honey, and salt into a blender. Turn blender on and slowly add Italian Varietal Olive Oil until emulsified.  Set aside.

Cut each avocado in half, take the pit out of the one half and take the skin off of both sides. Place the avocado flat side down and make slices into the avocado lengthwise, leaving it intact on the top end.  Lightly push down on the avocado so that it fans out.  Place the two halves of fanned avocado on a plate.

Toss together the hearts of palm and red onion in a small mixing bowl, then place on top of the plated avocado.  Drizzle the dressing on top of the avocado and hearts of palm mixture and top with cilantro sprigs.  Enjoy!
